Indonesian Sate Lilit with Coconut Sugar

– 3 shallots, finely chopped

– 1 tablespoon of galangal, grated

– 1 tablespoon of tamarind paste

– Salt and pepper to taste

– 1 tablespoon of cooking oil

Instructions:

1. Prepare the spice paste:

In a mortar or blender, grind together shallots, garlic, turmeric powder, coriander powder, lime leaves, and galangal until a smooth paste forms.

2. Mix the meat:

In a large bowl, combine the minced meat with grated coconut, the prepared spice paste, tamarind paste, chopped lemongrass, and coconut sugar. Season with salt and pepper to taste. Mix everything thoroughly until well combined. Let it marinate for about 30 minutes to allow the flavors to develop.

3. Form the sate:

Take a small portion of the meat mixture and mold it around the thicker end of the lemongrass stalks or bamboo sticks, pressing firmly to shape it into a sausage-like form.

4. Grill the sate:

Preheat a grill or charcoal barbecue. Brush the formed sate with a little cooking oil to prevent sticking. Grill over medium heat, turning occasionally, until the meat is cooked through and slightly charred on the edges, about 10–15 minutes.

5. Serve:

Serve the Sate Lilit hot with steamed rice or as part of a larger Balinese feast. For an extra flavor boost, serve with sambal or a tangy dipping sauce on the side.
