Ingredients:
- 3 ripe bananas
- 3 large eggs
- 200 grams all-purpose flour
- 200 grams coconut sugar
- 1/2 teaspoon baking powder

- A pinch of salt
- 1 teaspoon vanilla extract
- 100 ml milk (or almond milk or coconut milk for variation)
- 100 grams chopped walnuts or almonds (optional)

- Coconut sugar for sprinkling
Instructions:
- Preheat the oven to 180°C (350°F) and prepare a baking pan with parchment paper.
- Mash the bananas with a fork until smooth.
- In a large bowl, whisk the eggs and 150 grams of coconut sugar until pale and fluffy.
- Add the mashed bananas, coconut oil, and vanilla extract to the mixture and stir until combined.
- Sift the flour, baking powder, baking soda, and salt into the wet ingredients, folding gently until just combined.
- Pour in the milk and mix until the batter is smooth and well-blended.
- If using, fold in the chopped nuts.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Decorate with banana slices, chopped nuts, and the remaining 50 grams of coconut sugar.
- Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely. Slice and serve.
