Tofu Rendang with Coconut Sugar: Savory, Spicy, and Perfectly Balanced
Rendang, a traditional Indonesian dish renowned for its rich, savory, and spicy flavors, is usually made with meat. Ingredients:
- 500 grams of tofu, cut into large cubes

- 1 teaspoon salt
- 1 teaspoon tamarind water
- Cooking oil for sautéing
Ground spices:
- 8 shallots
- 5 garlic cloves
- 4 large red chilies (adjust to your heat preference)
- 3 candlenuts, roasted
- 2 cm ginger
- 2 cm turmeric
Instructions:
- Prepare the Tofu: Fry the tofu cubes until they are golden and slightly crispy on the outside. Drain and set aside.
- Sauté the Spices: Heat a small amount of oil in a pan and sauté the ground spices until fragrant. Add the lemongrass, bay leaves, kaffir lime leaves, and galangal. Stir until the spices are well-cooked and aromatic.
- Cook the Rendang: Pour in the coconut milk and mix it well with the sautéed spices. Add the coconut sugar and salt. Cook until the coconut milk boils and thickens.
- Add the Tofu: Gently stir in the fried tofu, making sure it’s well-coated with the rendang sauce. Simmer over low heat until the tofu absorbs the flavors.
- Perfect the Flavor: Add the tamarind water to bring a slight tang to the dish. Continue to cook until the rendang sauce releases its oil and turns a deep, rich color.
- Serve: Transfer the Tofu Rendang with Coconut Sugar to a serving dish and enjoy it with steamed white rice and fresh vegetables.
