Instructions:
1. Prepare the Peanut Filling:
– In a food processor, blend the roasted peanuts until they become a coarse powder.
– Add coconut sugar and continue blending until the mixture forms a paste. For a smoother texture, you can add a tablespoon of coconut oil.
– Set the filling aside in the fridge to firm up while you prepare the mochi dough.
2. Make the Mochi Dough:
– In a heatproof bowl, mix the glutinous rice flour and coconut sugar.
– Gradually add water, stirring until the mixture becomes smooth and lump-free.
– Steam the mixture for about 15–20 minutes or until the dough is fully cooked and slightly translucent.
3. Shape the Mochi:
– Dust your work surface and hands with cornstarch to prevent sticking.
– Once the dough is cool enough to handle, divide it into equal portions (about the size of a golf ball).
– Flatten each portion of dough into a small disk using your fingers.
– Place a small spoonful of the peanut filling in the center of the dough.
– Carefully wrap the dough around the filling, pinching the edges to seal the mochi completely.
– Roll the filled mochi gently between your hands to form a smooth ball.
4. Serve:
– Dust the finished mochi with a little more cornstarch to prevent sticking and serve at room temperature. You can also refrigerate them for a firmer texture, though they’re best enjoyed fresh.

– If you prefer a softer filling, feel free to mix the peanut paste with a little honey or additional coconut oil.
