Instructions:
Prepare the pie crust: In a bowl, mix the flour and salt. Add the cold butter pieces and rub them into the flour using your fingers until the mixture resembles breadcrumbs. Gradually add ice water while mixing until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Prepare the apple filling: In a bowl, combine the apple slices with coconut sugar, cinnamon, cornstarch, lemon juice, and a pinch of salt. Mix well until the apples are evenly coated with the sugar and spices.
Assemble the pie: Preheat the oven to 180°C (350°F). Take the pie dough out of the fridge and roll it out into a flat circle. Place the dough into a pie dish and press the edges to adhere. Prick the bottom of the crust with a fork to prevent puffing during baking.
Add the filling: Pour the apple mixture into the pie crust, spreading it out evenly.
Bake the pie: Bake the pie for 40–45 minutes or until the crust is golden brown and the apples are soft. If the pie begins to brown too quickly, cover the top with aluminum foil to prevent over-browning.
